Under the Dwarven Lifepath, Word Bearer, the skill Quick Step is noted as a Training Skill, but there is no mention of it elsewhere in the book. Is this a typo and meant as a Trait, or is it an actual omission?
it's an infamous "unlisted skill". Feel to insert your own definition/application, but I play it as Running Training.

Not having the books with me right now...
Do dwarves suffer from their stature? I did not go over the elf, dwarf and orc section in detail (BTW ORcs ROCK!!!!!!). Are dwarves short? Are elves taller than man? What does this mean mechanically? Reach issues, etc?
As such, Quick Step could also give a bonus for Get Inside :) Maybe an extra die? I think that would be cool.

The only stature penalty is that Dwarfs have a smaller moving rate multiplier. I think it's Walkx1, Jogx1.5, and Sprintx2.
But I wouldn't dare mention that to a Dwarf if I were you!
Consider the race descriptions as based on Tolkien folk. Tall Elves and short Dwarves.
